All The Good Things… In A Muffin!

We are one day away from starting 2019! Which means those New Years resolutions must be all written out and lined up ready… “Being healthy” - tick this one off from day one with these gluten free breakfast muffins!

Yes, you read right… muffins! Because what better way to make sure you eat breakfast not matter if you’re rushing out the door or still recovering from those NYE celebrations. Packed with all the best nutrients to start the morning off with a bang (or help that hang over), this will certainly become a staple for kids and adults.

The best part is they are so delicious, the health benefits pretty much are disguised!

Gluten Free Apple and Oat Breakfast Muffins

Inspired by Kraut- Kopf

Ingredients

  • ½ cup oats (Graci Laboratories - Thin Love)

  • 1 1/3 cups brown flour (Oatback Harvest)

  • 2 tsp baking powder

  • 2 tsp ground cinnamon

  • 1 tsp ground nutmeg

  • 1 tsp salt

  • 2 large eggs

  • 1 cup brown sugar

  • ½ cup golden raisons (normal is also fine)

  • 2 apples, peeled, cored and diced

  • 1 large carrot, peeled and grated

  • ½ cup canola oil

  • 1/3 cup oat milk

  • Vanilla sugar and shaved coconut for garnish (optional)

Method

Pre heat oven to 180 degrees Celsius. Line a 12 cup cake tray with muffin holders or you can simply make your own by cutting slightly larger squares out of baking paper.

First prepare apples and carrot - peel, core and roughly dice apples and peel and coarsely grate carrot - set aside.

In a large bowl, beat sugar and eggs until incorporated. In a medium bowl, mix together baking powder, flour, cinnamon, nutmeg and salt. 

Fold dry ingredients into the sugar/egg mix. Once it begins to become dry, add oil and milk as well carrots, raisons and apples. Mix well until all combined. It should be a rather thick, crumbly mixture.

Spoon into muffin tin, filling each muffin cup to the top. If you would like a crunchy topping, sprinkle each muffin with vanilla sugar and coconut. Bake for 20-25 minutes or until golden on the top.

Remove from the oven and place on a wire rack to cool. Equally grab one and go!
