Apple & Tomato Chutney

Christmas is fast approaching which means you are probably very busy organising presents, family, friends, location, table design and the list goes on. You have probably already brainstormed a few dishes and drink options to make the Christmas Eve or Christmas Day (depends on your location) but what about the accompanying sauces that serve as delicious dipping sides?
This apple and tomato chutney will not only impress all of your guests but it may have you sneaking spoonfuls post meal time because it’s just that damn good! It also means if there are jars that weren’t opened, you can save them for another party or rainy day.
Now before you freak out, chutney making especially this recipe, is really not as hard as it seems. Often people think making preservatives is something way too time consuming and complicated but really it only involves placing a few key ingredients together in a pot and letting the stove top do the rest of the work. Stand by though because half the fun is watching the seperate ingredients evolve into a thick, chunky and speckled red sauce.
If you do not want to sterilise and keep more for later, simply just make half the batch and use this right away (or within the month).
Apple and Tomato Chutney
Ingredients
1.5kg apples, cored and roughly diced
2 small onions, roughly chopped
800 gram tin chopped tomatoes
3 tbsp raisins
2 tsp curry powder
2 tsp salt
1 ½ red wine vinegar
3 cups sugar
2 tsp caraway seeds
Method
It’s this simple - place all ingredients in a large pot on high heat. Bring to the boil and reduce heat to medium/low.
Cook, uncovered, for 2-3 hours or until the liquid has evaporated and the setting point* has been reached. Make sure you stir every 15-20 minutes to avoid the ingredients catching on the bottom.
Once setting point has been achieved, place the chutney in sterilised jars*. Keep in a room temperature place and once opened, use within 1-2 months.
