Savoury Pancakes
Ingredients
1 3/4 cup all purpose flour
2 tsp baking powder
1 tbsp garlic powder
1/2 cup coriander, washed and chopped
1 tbsp salt
1 egg
1 cup oat milk
1/2 cup canola oil
2 spring onions, thinly sliced
Sesame seeds, spring onions and coriander for garnish
Method
In a large bowl, combine the flour, baking powder, garlic powder, salt, coriander and spring onions. Stir to incorporate and then make a well in the centre. Add egg, milk and oil and mix well until a batter forms. Make sure it is smooth - slightly runny but not uncontrollable.
In a large non stick pan, heat 2 table spoons of oil on high heat. Place one heaped table spoon of batter (about 3-4 can fit in one large pan). Do not over crowd as you will learn that they like to stick together!
Flip after 3-4 minutes or until golden brown. Cook for a further 3 minutes and then remove from the pan, placing on some kitchen paper towel. Repeat until all the batter is used.
To serve, place a handful of spinach on a plate, topping with 3-4 pancakes then a sprinkle of extra coriander, spring onions and sesame seeds. I love fresh tomato and sweet chilli mayonnaise as the dipping sauce but please be create and add any other ingredients you like.
