Basic Corn Fritters with black garlic mayonnaise

Your Daily Veg and Treat All In One

An easy mid week meal that involves all your daily veg essentials in delicious fritter form. All you need 30 minutes and a few cupboard ingredients and the world is your oyster (or dinner is served)

Feel free to substitute the flour for gluten free flour to make it that much more body figure friendly. My favourite part of this dish is the black garlic (although not always readily available) it adds such a earthy unique flavour at every bite.

Corn Fritters with Black Garlic Mayonnaise 

Ingredients

For Fritters

  • 2 spring onions, thinly sliced

  • 1x330gram tin corn

  • 3 sprigs of parsley (with stem), thinly sliced

  • 1 small red pepper, diced

  • 1 medium egg

  • 1 tsp salt

  • 1 cup flour

  • Sunflower oil for frying

To Serve

  • ½ cup whole egg mayonnaise

  • 3 cloves black garlic

  • Salt and pepper to taste

Method

In a large mixing bowl, mix together the corn kernels, spring onions, pepper, parsley and salt. Crack the egg (or vegan egg substitute) into the centre, mixing to break up the yolk and disperse over evenly. 

Add flour and mix well. Using about half a cup of water, gladly pour this in until a batter forms (you may need more or less water). If there is too much flour to make a batter, add more water and if there is too much water that it is runny, add more flour.

Place a large pan on high heat with about 2 tablespoons of oil. Wait for the oil to be hot (around 2 minutes) and using a tablespoon as your size, dollop one into the hot oil. Press down to make a flat bottom. You should get around 5-6 fritters in one pan. 

Flip when golden and crispy and the remove from heat once the reverse side is the same. Repeat until all the batter has been used. 

Meanwhile, to make the mayonnaise, place the black garlic on a baking tray in a 210 degrees Celsius pre heated oven and bake for 10-15 minutes or until when pressed lightly, the garlic breaks at your touch. Remove from the oven and leave to cool.

Once the garlic is cool, use a fork or mortar and pestle to crush. In a small bowl combine the crushed garlic, mayonnaise and a pinch of salt and pepper. 

When the fritters are ready, serve the garlic mayonnaise along side plus a fresh green salad.
