Bake and Dip


There isn’t much to say about these spicy cauliflower wings other than they are the perfect solution for any vegan eaters (also great for meat eaters too) when your in need of a tapas style snack or flavour packed side dish.


Mahi Fine Foods offers a great selection of amazing quality hot sauces and marinades. Coating the Cauliflower bites in the “wings marinade” and then baking, every ingredient is absorbed and released as it hits your mouth. If you cannot get access to this product, you can use other products you wish to (including less spice if this doesn’t tickle your fancy) or a combination of Ras el Hanout, Harissa and water.

Spicy Cauliflower Wings

Serves 2

Ingredients:

For Cauliflower -

Half a head of cauliflower, separated into florets with some of the stalk kept intact

2 tsp cumin

2 tbsp dried thyme

¼ cup of Mahi Fine Foods “Wings Marinade” Medium heat

Pinch of salt & pepper

Lemon wedges

For garlic parsley mayonnaise -

1/3 cup of store bought mayonnaise of choice (also can use vegan mayonnaise)

2 tbsp of dried or fresh parsley, finely chopped for fresh

2 tsp of finely chopped garlic (you can use powdered garlic too)



Method:

Pre heat oven to 170 degrees Celsius. Line the baking tray with parchment paper - this is highly suggested to make cleaning easier but not essential. In a bowl, combine all the “for cauliflower” ingredients and mix well. If you have time, leave to marinade for 1 hour but certainly not necessary as I never remember to pre-marinade things before I am hungry. Place on the tray and spread evenly. Bake for 20-30 minutes or until the cauliflower has softened a little and absorbed the marinade.



For the mayonnaise, simply combine all ingredients and mix well until you can tell the parsley isn’t clumped in one section. Remove the cauliflower from the oven. To serve, place a generous spoon of mayonnaise along side the cauliflower bites. Add a slice of lemon (or lime) and a sprinkle of dried or fresh parsley to finish. Eat quickly, but these little vegan wings do hold a little kick to them.
