Fig and Mozzarella Salad with Fresh Herbs
The Happiness in Figs
It’s almost physically impossible to not smile when you see the inside of a fig. The purple and deep red colours merging together to become a oozing beacon of light.
Although this fruit only is available for a short time once a year (sometimes twice, depending on where you live), when they appear, they appear in large quantity and at perfect condition - so I suggest buy a sh** tone and shoot for the stars! Eating them raw is a perfect fresh summer vibe but they are also amazing caramelised on your yogurt brekkie or slow cooked in a relish.
Here is a great salad that leaves those pots and pans in the cupboard and relies on natural and fresh flavours in the raw ingredients. Simply arrange on a plate hand broken mozzarella (or burrata is preferred) and figs. Top with fresh basil, salt, pepper and drizzle with extra virgin olive oil. Enjoy!
