Your pancake day celebrations don’t have to start when eating. Make the preparation just as joyous eating with friends and family with these easy peasy perfect pancakes, offering a basis for any (and all) topping preferences.

So why participate in pancake day? Because it’s a day that no matter your age, gender, nationality, dietary preferences, location or background, we all come together and unite through the means of cooking. And cooking pancakes at that when it’s not the weekend… hello! You can adapt as you desire and eat for any (and maybe every) meal you wish for the day.

So why this recipe? Because who wants to spend hours shopping for specific and hard to find flours or out of season fruits. Keep the pancake simple and add textures and flavours on top for a personalised and intimate style.

Perfect Pancake Day Pancakes

Ingredients

  • 1 cup plain flour

  • 1 cup oat milk

  • 1 tsp baking powder

  • 2 tbsp sugar

  • 1 tsp vanilla extra

  • 1 egg

  • 2 tbsp canola oil, plus extra for cooking

  • 1/2 tsp salt

  • banana, oats, honey, maple syrup, fresh berries, chia seeds etc for serving

Method

In a large bowl, sift the dry ingredients together (flour, baking powder, sugar and salt). In a small bowl combine and mix the wet ingredients (milk, oil, vanilla and egg). 

Make a well in the centre of the dry ingredients and pour half the wet ingredients into the well. Mix well and add the other half when turning dry.

Heat a none stick frying pan on high heat and add a table spoon of oil. Using a large table spoon, scoop and drop onto the hot pan (one tablespoon is one pancake). Repeat until pan is full with a room between each to expand. Flip once bubbles begin to appear on the surface. Cook for a further 1-2 minutes and place on a saving platter. 

Repeat until all pancake mix has been used. Serve immediately with toppings of your choice. Try my Baileys Caramel Sauce for a delicious pancake day treat and a little something unique for this special universal day.
