Vegan Spaghetti Bolognese with Purple Basil
A hearty pasta dish sounds nice right about now, no? Getting a thick layer of sauce, covering your favorite pasta, and spooning it right into your mouth sounds like the ultimate #comfortfood. Vegan or not, this bolognese is for you.
You often think of red meat when the word “bolognese” comes up, am I right? Think again. This recipe is made for all those people out there that need a meatless but hearty option that actually tastes great. No soy based products because we all know these seem to sit in your stomach for days or taste like rubber. We use a delicious vegan alternative made by the trusting Sunflower Family. They have created a product that is made from sunflower protein and is certified free form all 14 allergens. It’s as simple as rehydrating these proteins with one cup of water, add the supplied sauce (or one of your own) and you’ve got yourself a delicious meat-free meal with all the necessary daily nutrients.

Vegan Spaghetti Bolognese with Purple Basil
Ingredients
1 Vegan bolognese packet from Sunflower Family
1 onion, diced
2 garlic cloves, minced
1 tin Italian diced tomatoes
300 grams spaghetti
Salt and pepper to taste
Fresh purple basil to serve
Method
In a large, deep pot, cook the pasta according to the instructions (always with salted water). Before straining, reserve one cup of cooking water. Set aside the cooking water and the cooked pasta.
In a large pan, heat 2 tablespoons of olive oil and add the onion. Cook for 2-3 minutes then add the garlic, tomato tin and vegan bolognese. Cook for 10-15 minutes, adding the pasta cooking water in half way through.
Note; the package does come with an instant tomato base but I prefer to make my own and it doesn’t require much more time anyway. If you prefer to use the instant packet, go for it!
Once the vegan bolognese is cooked, it should be soft meat looking pieces in a thick tomato sauce, add the spaghetti into the pan and carefully mix to coat.
Serve the spaghetti in bowls with a generous spoonful of sauce on top. Sprinkle with salt and pepper to taste and fresh purple basil leaves. You can use cheese at this point (vegan or not) if you desire.
