Homemade tomato sauce with Brussel Sprout pasta
Yep, you read that correctly. Now, before you stop reading, exit this page and go on completing your daily routine just hear me out for one second. I will admit that this doesn’t sound nice or act as one of those recipes that jump out at you because it makes you want to gobble the whole image up at once. But, it does integrate some of the most popular and available ingredients just in a modernised, healthy version.
We have all seen those big Italian Instagramed pasta dishes, that looks insanely good but probably contains your daily calories in one, as well as the oh so lovely tomato salad dishes, so why not create a healthy version of year round tomato pasta.
For those who are addicted to Brussel Sprouts, then you will be in food heaven with this dish and for those who despise Brussel sprouts, trust me when I say that you may begin to secretly love them once you get a mouthful of this. The best part is because it’s so healthy, you can have a sneaky glass (or two) of wine along side.
Homemade tomato sauce pasta with sautéed Brussel sprouts
Serves 3 - 4
Ingredients:
2 large very ripe tomatoes (you can use the cheaper ones or the more expensive ones - to your liking)
2 tbsp olive oil
1 large onion - thinly sliced
2 gloves of garlic - diced
1.5 teaspoons of oregano and basil
2 tbsp of sweet paprika
250grms brussel sprouts - 1cm end cut and quartered
300grms of Spaghetti or fettuccine pasta of your choice (fresh or dried)
Fresh basil to garnish
Method
Bring water to a boil in the kettle. Cook pasta according to the instructions - fresh pasta normally takes between 3-4 minutes and dried between 10-12 minutes. Whilst this is happening, place oil in a large fry pan and add the onion and a pinch of salt. Cook for 3-4 minutes and then add garlic and Brussel sprouts. Cook for a further minute and then add the tomatoes, a pinch of pepper, paprika and dried herbs plus a splash of water. Cook until the tomatoes begin to break down around 3-5 minutes. Taste and add salt/pepper accordingly. Add the cooked pasta to the pan and mix well until pasta is coated. To serve, dish out pasta into bowls with a generous mix of tomato sauce and Brussel sprouts and finish with the fresh basil leaves.
Note - If you are wanting a touch of cheese, add a light sprinkle before the basil garnish.
