Savoury French Toast

Ingredients

1 day old brioche baguette

3 eggs

1 cup milk

2 spring onions, finely chopped

1 parsley stalk, finely chopped

2 thyme sprigs, leaves removed

Pinch of Salt and pepper

1/2 cup parmesan, finely grated

3 tbsp canola oil

Grilled eggplant, crispy bacon, fresh thyme sprigs to serve

Method

In a large potato oven dish (flat but with an edge) whisk together the eggs and milk. Add the spring onions, parsley, thyme and salt and pepper. Whisk until incorporated.

Slice the brioche length ways and place cut side down into the egg mixture. Press with your finger tips to help flatten a little and help absorption. Leave for 10 minutes (minimum) before flipping and leaving for a further 5 minutes.

Heat a none stick pan with the canola oil. Really allow the oil to be hot (3-4 minutes) then place the brioche, flat side down, into the oil. Cook for 4-5 minutes or until golden brown, flip and cook for a further 2 or so minutes. Remove and plate into small dishes. Repeat with remaining brioche.

To serve, sprinkle the grated parmesan over the top as well as sea salt. If you need something extra, grilled eggplant slices, crispy bacon or thyme pan fried Chantelle mushrooms are three great options.
