Hey burgers fanatics! I got a nice new recipe for you. One that will not only satisfy those deep rolling burger cravings but it will also please add all those necessary daily nutrients into your day. No need to stoop to those MacDonalds burgers anymore just to get that weekly burger fix when there is Freak of Nature in circulation.

Burgers. They are a sandwich look-a-like but circular, normally not as good for the inner and outer body and continue little fresh ingrdidents. Bread, ground “left over” meat, melted “plastic” style cheese and the sugary ketchup/mayonnaise duo. Sound like your Sunday morning hang over craving? Or maybe it sounds like your cheat day meal because burgers are everything and you’re on a tight budget. Let me change this for you. There is no need to put such oil-ridden, unflavoured, nutrient scarce burger into your mouth when you have access to an all natural, inexpensive and 100% more delicious solution on offer.

Delivered right to the front door and requiring not much more than boiling the kettle, soaking and frying, this health food and nourishing food company is bringing a new and nutritious light to those “craving foods”. Allow those burgers to be present in your life but to do so proudly rather than secretively. So, Macca’s, step aside. Freak of Nature is in the picture and boy do they challenge all this burgers.

Pairing their subtly spiced Thai patties, which take no more than mixing in boiling water and leaving for 15 minutes, with fresh herbs, raw kale, a bold tangy from the radishes and the spicy but sweet homemade relish means these burgers are more than just bread, patty and cheese. Be vegan or not, these babies will satisfy that rumbling tummy but also leave you slight as a daisy for that summer vibe.

Before you freak out at the thought of making your own relish, keep with me for a second because there really isn’t anything to be afraid of but rather rewarding. Making your own sauces and spreads means you know exactly what goes into creating a sauce and then you have ownership not only to feel good about making an ingredient that seems impossible, all by yourself but also about what is really going into that body of yours. You would be shocked to know how much added, white and frankly bad sugar goes into all those supermarket bought sauces. One to make it taste good and easily addictive but also because sugar is the easiest way to preserve the life of food. These sauce companies, like many fast food chains, want to maximise their profits without granting to maximise your life.

With the combination of making your own relish (which this batch will make for plenty of burgers as well as to pair with meats, fish or pizza toppings, may I add) and the carefully sourced Freak of Nature burger product, your best interest is put front and centre. Don’t worry, those taste buds will still be happy little buds and actually thanking you.

Freak Of Nature Thai Veggie Curry Burger with Spiced Cucumber Relish 

Ingredients 

For the Spiced Cucumber Relish

  • 2 cucumbers

  • 2 tsp table salt

  • 1 red pepper

  • 1 tsp cayenne pepper

  • 1/2 cup vinegar

  • 1 cup sugar

  • 1 shallot

  • 1 garlic clove

For the Burgers

  • 1 Freak of Nature Veggie Curry burger mix

  • 1/2 cup coriander 

  • 3 tbsp canola oil

  • 2 burger buns of choice (I used ciabatta bun loafs for a healthier option)

  • 3 radishes, thinly sliced 

  • 1 cup kale, washed and roughly broken

  • 2 tbsp spiced cucumber relish 

Method

Making the Relish; Roughly cut the cucumbers and place in a large bowl with the salt, mix well and leave over night. This drains the water out and helps to create a thick relish not soup. 

In a blender, pulse the pepper, onion, garlic and cucumbers to a rough grind. Place in a large pot and cook with the vinegar, cayenne pepper and sugarer 10-15 minutes or until thickened. Pot into serialised jars, keeping some out for serving with this dish.

Making the Burgers; in a large bowl, place the Freak of Nature Burger mix along with 150mL of boiling water and whisk to combine. Leave for 10-15 minutes uncovered. 

When the mixture is cool enough to handle, seperate into 4 large balls (or 8 small balls if you are using more traditional sized burger buns). Roll with thee palms of your hands and flatten the bottom and top. 

Fry in the oil on high heat for 5-6 minuets on the first side, flipping, to cook for a further 2-3 minutes on the other side or until crispy and golden brown. Remove from the heat and drain the excess oil on paper towel.

To Assemble; Grill the burger buns on a grill or using the burger pan with a splash of oil. Top with a tablespoon of the Spied relish, kale, two Freak of Nature burger patties, radish, fresh coriander and a drizzle extra of the relish. Cover with the top of the burger and enjoy.
