Sweet Chilli Tuna Salad with Pickled Cucumbers and Dill
Salad of Sweet Chilli Tuna, Baby Cucumbers and Dill with tahini dressing
Ingredients
200 grams good quality flaked tuna
2 tbsp sweet chilli sauce
1 tsp whole egg mayonnaise
1/2 baby cucumber, finely sliced and pickled in vinegar solution
2 tbsp dill, roughly chopped
2 stalks basil, removed from the stem
2 stalks shiso, removed from the stem
For the Dressing
1 tsp tahini
2 tbsp mayonnaise
2 tsp olive oil
1/4 tsp cumin
1 tsp lemon juice
Method
In a small bowl, combine tuna, sweet chilli and mayonnaise and mix well. In a serving dish, lay the shiso and basil, roughly torn, followed by the cucumber slices. Using a teaspoon, scoop the tuna mix and scatter around. Sprinkle with dill.
To finish, prepare the garnishing sauce by shaking all the dressing ingredients together in a glass jar. Drizzle over the salad and enjoy.
