Pineapple & Empress 1908 Granita
Th is recipe is inspired by Two Loves Studio granita in collaboration with Empress 1908 Gin. See her post here. I adapted it a little based on what I had and wanting to use coconut liquor.
Pineapple & Empress 1908 Granita
Ingredients
2 1/2 cups pineapple juice
4 oz coconut liquor
8 oz empress 1908 gin
6 oz grenadine syrup
2 1/2 cups tonic water
2 oz simple syrup
1 1/4 cups lemon soda (Churchill)
Method
Whisk together the pineapple juice and coconut liquor in a freezer proof bowl.
Whisk together the gin, grenadine syrup, simple syrup, tonic and lemon soda in another freezer prod bowl. Freeze both overnight.
The following day, remove both bowls from the freezer and scrap with a fork, resulting in ice shavings.
To serve, place 2-3 tablespoons of the empress granita on the bottom of a cocktail glass. Top with half of the pineapple granita. Enjoy.
