Easy Chocolate Cake with 3 Minute Chocolate Icing

Savoury or sweet? What kind of person are you? Regardless of whether you’re a sweet tooth or not, this cake will rock your world.
I myself, have always selected the savoury option when given the choice. My desire to try decedent deserts and endless varieties of sugary dishes has never seemed to appear. But, when stumbling across this recipe around 15 years ago, it has not left my cooking repertoire since.
How nice is it to have those select friends and family around you that only ever enjoy a dish when you cook it? This is one that, after tweaking it a little, has not only stayed in my heart, but has also become a staple in many other’s.
The soft light spongey interior with the smooth and not too rich chocolate icing exterior gives you just enough of a sweet note without being a sugar overload. Slice a piece for any birthdays, holidays and my favourite Easter! Enjoy your long weekend and treat yourself with a delicious chocolate cake for the whole fam!
Chocolate Cake
Ingredients
1 1/3 cups of sugar
1 3/4 cups of self raising flour
125grams of butter, melted
1/2 tsp of baking powder
1/3 cup of coco powder
2 eggs
1 cup of milk Icing
2 tbsp of margarine
2 tbsp of boiling water
1/3 cup of coco powder
2 cups of icing sugar
Method
Pre heat oven to 175 degree Celsius. In a round 20cm cake tin, rub butter and coat with flour to prevent cake batter sticking.
Place all ingredients in an electric mixer (I use a Kitchen Aid). Place on medium speed and mix until a smooth but medium thick batter forms. Pour batter into cake tin and bake for around 30-35 minutes or until skewer comes out clean. Remove from the heat and set aside to cool.
For the icing, melt butter in a bowl. Add half the icing sugar and mix until unable to stir. Add water and the other half of the icing sugar. Mix and add coco powder. If you need to make the mix more/less thicker, do so by adding icing sugar or boiling water.
With a flat knife, coat the sides and top of cake (be as rustic or smooth as you would like). Enjoy!
